Mandarin Orange and Walnut Surprise

Ingredients:

 
1 cup crushed graham crackers
1/4 cup walnuts or cashew nuts, finely chopped
1/4 cup unsalted butter or margarine, melted
2 cups fresh milk or skim milk
1/2 cup cornstarch
2 egg yolks
3/4 cup sugar
1-15 oz can mandarin orange segments, drained, chop half of contents, reserving half for garnishing and cherries.


  
Procedure:

 
  1. Mix together crushed graham crackers, walnuts and melted butter.
  2. Press into the bottom and sides of a 9 inch pie plate or springform pan. Set aside
  3. Combine milk, cornstarch, egg yolks and sugar in a saucepan. Cook over olw flame while stirring constantly until thick.
  4. Remove from heat then fold in chopped oranges. Pour mixture over prepared crust and level top with a spatula.
  5. Garnish on top with remaining orange segments and cherries.
  6. Makes 6 servings.
