1/4 cup walnuts or cashew nuts, finely chopped
1/4 cup unsalted butter or margarine, melted
2 cups fresh milk or skim milk
1/2 cup cornstarch
2 egg yolks
3/4 cup sugar
1-15 oz can mandarin orange segments, drained, chop half of contents, reserving half for garnishing and cherries.
- Mix together crushed graham crackers, walnuts and melted butter.
- Press into the bottom and sides of a 9 inch pie plate or springform pan. Set aside
- Combine milk, cornstarch, egg yolks and sugar in a saucepan. Cook over olw flame while stirring constantly until thick.
- Remove from heat then fold in chopped oranges. Pour mixture over prepared crust and level top with a spatula.
- Garnish on top with remaining orange segments and cherries.
- Makes 6 servings.
